Cascajal applies the Pisco tradition of the Cañete Valley (90 mi south of Lima, Peru) which began at the beginnings of the Peruvian Colony in the XVI century. It is in this area between the Cañete Valley and Ica Valley (186 mi south of Lima) where after some time Pisco was transformed into the best spirit in Peru spreading its consumption through all the country. In the XVII century, it was already exported to South America and even Spain. In the XIX century, the Peruvian spirit was dispatched from Pisco Port and it was already known in a variety of places such as San Francisco in USA, all South America and Europe.
